Vegan Breakfast Burrito
I always love having a great breakfast in bed, I decided to take the day to myself which is always good to take time off to yourself. I decided to make my favorite breakfast burrito because I was craving vegetables.
I always add a stirfry mix of Red peppers, Mushrooms, Spinach, Tomatoes and red onions.
I put them in a pan with coconut oil and let them cook for 4 to 5 minutes on medium. I do not like the vegetables to be too soggy so I like to barley cook them. Also cooking food at high temeperatures for long periods of time kills the live enzymes in the food and it becomes less nutritous for the body.
Cooking food for 5 minutes or less is the best way to keep the live enzymes in your food.
After slightly cooking the vegetables I then add: cilantro, salsa, corn, and Avocado.
I also add Hemp seeds to add a complete source of Vegan Protein.
Lay out a whole grain tortilla and put the ingredients in and wrap, you then have the option to cook on a frying pan, cook in oven or on a small grill.
