Vegan Pumpkin Spice Pancakes
These are by far my favorite holiday pancakes, You can also make these Gluten free by changing the flour to gluten free pancake mix while still using all the other same ingredients. I just recently starting making these pancakes and I fell in love with them. Hope everyone loves them just as much as I do.

INGREDIENTS
- 1 and 1/4 cups All Purpose Flour
- 3 Tbsp Brown Sugar
- 1 Tbsp Baking Powder
- 1/4 tsp Salt
- 3/4 cup Coconut Milk
- 1 Tbsp Coconut Oil
- 1.5 tsp Pumpkin Pie Spice
- 1/3 cup Pumpkin Puree
- 1 Tbs Cinnamon
- 2 Tbs Chia seeds (added protein)
INSTRUCTIONS
- Sift flour into a mixing bowl and add the sugar, baking powder, Chia seeds and salt and mix together.
- Pour in the coconut milk and add the coconut oil, pumpkin pie spice and pumpkin puree and mix together.
- Heat a frying pan with a tsp of coconut oil.
- When the pan is heated, pour in some batter.
- Flip over approximately after 60 seconds.
- Keep flipping the pancakes, pressing down to ensure no wet batter is in the center.
- Serve the pancakes with vegan butter, syrup and sprinkles of pumpkin pie spice.
